
So here goes… the first post. I don’t know why I am so nervous about showing people what we had for dinner on this particular day but for some reason I am.
I like to keep a couple of pork roasts in my freezer because they are perfect for putting in the slow cooker on a busy day. After running errands and working in the yard all day, it was lovely to sit down to this delicious and simple slow cooker pork roast for dinner that took very little effort on my part.
The prep was simple. I put the potatoes and carrots in the bottom of the slow cooker, laid the roast on top, and seasoned it with seasoning salt, garlic powder, and onion powder. Then I added about ½ cup of water to the bottom, put the lid on, turned it on, and walked away.
Since it is late summer, I served the roast with sliced cucumbers and tomatoes fresh from the garden. It was a simple, delicious dinner and one that felt especially satisfying after a busy day.
