Leftover Lentil Barley Soup: Turning It into a Second Dinner

Usually, when I make soup, I make enough to have leftovers. Sometimes I serve them for lunch alongside a sandwich, and other times there is enough for a second dinner. This time, I decided to serve the leftover lentil barley soup for dinner, but with a twist.

When serving leftover soup, I like to change things up a bit for variety. Sometimes that means serving it with a different side dish, and other times I add a few extra ingredients. This time, I did both.

I had some cooked ground turkey and leftover cooked vegetables in the refrigerator, so I added them to the soup. I adjusted the liquid and seasonings until everything tasted just right. Instead of serving the soup with bread as I had the first time, I baked some potatoes to serve alongside it.

Changing up leftover soup is an easy way to make it feel like a new meal without starting from scratch. A few extra ingredients and a different side dish were all it took to give this leftover lentil barley soup a second life. It is one more way I make the most of the food I already have on hand while keeping our grocery budget in mind.
