Pumpkin Pie and the Pie Crust Recipe That I Regret

The last time I was at the grocery store, I spotted those little sugar pie pumpkins and thought it would be fun to make a homemade pumpkin pie with my granddaughters. I had visions of a fun baking day together, and I was looking forward to making a pie from pumpkins we prepared ourselves.

One day, we roasted the pumpkins and scraped out the flesh to store in the refrigerator. The next day was pie-making day.

I’m not sure why I didn’t just use my tried-and-true pie crust recipe that I’ve been making for years, but a new recipe caught my eye. Sometimes you just feel like trying something different!

The recipe had me divide the dough into two pieces. I assumed that meant one piece was for today’s pie and the other was for another time. As it turned out, I used almost all of the dough for a single pie, with just a little bit left over.

The dough was also so soft that I had trouble shaping the edges the way I wanted them. It wasn’t quite the pie crust experience I had in mind!

Thankfully, the pie was delicious anyway. But next time, I’ll be going back to my old standard recipe. There’s something to be said for sticking with a recipe you know works.

Sometimes trying something new pays off, and sometimes it just reminds you why you liked the old recipe in the first place. At least we had fun making a pumpkin pie together, and that’s what matters most.
