
Usually, after we have burrito bowls for dinner, I use the leftovers to make burritos. This time, though, I decided to turn the leftover ingredients into freezer burritos for another day.
There were four tortillas, along with some beans, rice, and corn. I mixed the beans, rice, and corn together, then added some shredded cheese and salsa. I gave everything a good stir and divided the mixture among the four tortillas. Finally, I rolled each burrito and placed them in the freezer.
Future me will be so happy with present me when I am able to pull these out of the freezer for a quick and easy meal.
I still had a few beans and some corn that I didn’t want to go to waste, so I put them into the freezer, too. I’ll bring them out when I want to make taco soup or chili.
