Shredded Chicken for the Freezer

I like to keep several kinds of chicken in my freezer. At any given time, I might have a whole chicken, breaded chicken patties, and plain chicken breasts on hand. During my latest grocery shopping trip, I knew I had plenty of those, so I was looking for a good price on fresh chicken breasts to make shredded chicken for the freezer.

I was in luck! I found fresh chicken breasts at a good price and bought several pounds.

This is so simple to do. After I put the rest of the groceries away, I rinsed the chicken and put it into the slow cooker. Since I would be using it in several different ways, I didn’t season it. I simply turned the slow cooker to low and let the chicken cook for several hours, until it was tender enough to shred.

I don’t have a fancy way of shredding chicken. I just place the cooked chicken on a jelly roll pan and shred it with two large forks. Once it is shredded, I put it back into the slow cooker and let it sit for another hour or so to absorb the juices.

When the chicken has cooled enough, I divide it into freezer bags and put them in the freezer.

When all was said and done, I had six bags of shredded chicken in the freezer, ready to use in future meals. I even had just enough left over to make a pizza that my grandchildren had requested. Now I have another useful ingredient on hand for quick and easy meals like casseroles, pasta, enchiladas, and of course another pizze
